- 1 C coarsely chopped onion
- 1 C cilantro sprigs
- 1 jalapeño pepper, coarsely chopped
- 1 garlic clove, coarsely chopped
- 1 (14.5 oz) can diced tomatoes, undrained
- 3 Tbsp fresh lime juice
- 1/4 tsp salt
- 1 (14.5 oz) can diced tomatoes, drained
Directions:
- Place first 5 ingredients in a food processor, and process until minced. Combine onion mixture, lime juice, salt, and drained tomatoes in a medium bowl; stir until well blended.
