Chicken Marsala Wrap

Ingredients:
  • 1 tsp oil
  • 2 C thinly sliced onions
  • 4 C thinly sliced fresh mushrooms (about 3/4 lb)
  • 1 lb sliced cooked chicken
  • 1 C Marsala wine
  • 4 bacon cheddar cheese slices
  • 4 whole wheat tortillas
Directions:
  • Heat oil in a large skillet on  medium-high heat.  Add vegetables; cook and stir 10 minutes or until tender.  Stir in chicken and wine; cook 2 minutes or until wine has evaporated, stirring occasionally.
  • Top with cheese; cover.  Cook 1 minute or until cheese is melted.
  • Spoon chicken mixture down centers or tortillas.  Fold in opposite sides of each tortilla, then roll up burrito-style.
